Festive Halloween cupcakes made with rich chocolate cake, swirls of green buttercream “grass,” and topped with pumpkin candies. A fun, spooky centerpiece for parties.
1 cup all-purpose flour
¾ cup cocoa powder
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 large eggs
½ cup vegetable oil
1 cup sugar
½ cup buttermilk
½ cup hot coffee (or hot water)
1 tsp vanilla extract
Frosting & Decoration
2 cups unsalted butter, room temperature
4 cups powdered sugar
2 tbsp heavy cream
1 tsp vanilla extract
Green gel food coloring
Orange gel food coloring (optional, if piping pumpkins)
Pumpkin candies (mellowcreme pumpkins or fondant)
Optional: chocolate sprinkles or cookie crumbs for “soil”
Preheat oven to 350°F (175°C). Line a muffin tin with Halloween cupcake liners.
Whisk flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
In another bowl, beat eggs, sugar, and oil. Add buttermilk, vanilla, and hot coffee.
Mix dry ingredients into wet until combined. Divide into liners, filling ⅔ full.
Bake 18–20 minutes, until a toothpick inserted comes out clean. Cool completely.
For frosting: beat butter until fluffy, add powdered sugar gradually, then mix in cream and vanilla. Whip until smooth.
Tint most frosting green. Use a grass piping tip (#233) to pipe tufts of grass.
Top with pumpkin candies, or pipe pumpkins using orange frosting. Add cookie crumbs for soil.
Serve on a rustic board with mini pumpkins for a pumpkin patch effect.
Bake cupcakes ahead and decorate the day of your event.
Gel food coloring gives vibrant colors without thinning the frosting.
Gluten-free flour blends work well for a GF version.
