Festive Halloween cupcakes made with rich chocolate cake, swirls of green buttercream “grass,” and topped with pumpkin candies. A fun, spooky centerpiece for parties.

Ingredients

Scale
  • 1 cup all-purpose flour

  • ¾ cup cocoa powder

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 2 large eggs

  • ½ cup vegetable oil

  • 1 cup sugar

  • ½ cup buttermilk

  • ½ cup hot coffee (or hot water)

  • 1 tsp vanilla extract

Frosting & Decoration

  • 2 cups unsalted butter, room temperature

  • 4 cups powdered sugar

  • 2 tbsp heavy cream

  • 1 tsp vanilla extract

  • Green gel food coloring

  • Orange gel food coloring (optional, if piping pumpkins)

  • Pumpkin candies (mellowcreme pumpkins or fondant)

  • Optional: chocolate sprinkles or cookie crumbs for “soil”

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with Halloween cupcake liners.

  2. Whisk flour, cocoa powder, baking powder, baking soda, and salt in a bowl.

  3. In another bowl, beat eggs, sugar, and oil. Add buttermilk, vanilla, and hot coffee.

  4. Mix dry ingredients into wet until combined. Divide into liners, filling ⅔ full.

  5. Bake 18–20 minutes, until a toothpick inserted comes out clean. Cool completely.

  6. For frosting: beat butter until fluffy, add powdered sugar gradually, then mix in cream and vanilla. Whip until smooth.

  7. Tint most frosting green. Use a grass piping tip (#233) to pipe tufts of grass.

  8. Top with pumpkin candies, or pipe pumpkins using orange frosting. Add cookie crumbs for soil.

  9. Serve on a rustic board with mini pumpkins for a pumpkin patch effect.

Notes

  • Bake cupcakes ahead and decorate the day of your event.

  • Gel food coloring gives vibrant colors without thinning the frosting.

  • Gluten-free flour blends work well for a GF version.
