Peanut Butter Banana Quesadilla

A quick and easy comfort food made with creamy peanut butter and sweet bananas hugged by crispy tortillas.

Ingredients

  • 2 flour tortillas
  • 2 tablespoons peanut butter
  • 1 banana, sliced
  • 1 tablespoon honey (optional)
  • Butter or cooking spray (for cooking)
  • Cinnamon (optional, for sprinkling)

Instructions

  1. Heat your skillet over medium heat.
  2. Lightly grease the skillet with butter or cooking spray.
  3. Spread an even layer of peanut butter on one side of each tortilla.
  4. Place banana slices over the peanut butter on one tortilla, and drizzle with honey if using.
  5. Place the second tortilla on top, peanut butter side down.
  6. Cook the quesadilla for about 2–3 minutes on each side until golden-brown and crispy.
  7. Remove from skillet and let cool for a minute.
  8. Cut into wedges and serve, sprinkled with cinnamon if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. To reheat, use a skillet on low heat for a few minutes or microwave (texture will be softer).
