A delicious Loaded Breakfast Bagel Sandwich filled with crispy bacon, fluffy eggs, fresh avocado, and tangy tomato, perfect for any breakfast occasion.

  • 4 bagels (halved)
  • 6 large eggs
  • 6 slices bacon
  • 4 slices cheddar cheese
  • 1 avocado (sliced)
  • 1 tomato (sliced)
  • 2 tbsp butter
  • 2 tbsp milk or cream
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tbsp chives (chopped)

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 6–8 minutes.
  2. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease.
  3. Slice the bagels and toast them in a skillet with butter until golden brown.
  4. Whisk together the eggs with milk, salt, and pepper in a bowl.
  5. Cook the eggs in a buttered skillet over medium-low heat, stirring gently until soft and fluffy.
  6. Place the cheddar cheese slices over the cooked eggs to melt.
  7. Layer the eggs, bacon, avocado, and tomato on the bottom halves of the toasted bagels.
  8. Sprinkle with chopped chives, then top with the remaining bagel halves.
  9. Serve warm and enjoy!

Notes

For a fluffier egg texture, whisk the eggs vigorously, adding a splash of water or milk. Don’t rush the melting of the cheese—low heat works wonders.
