  • 4 boneless, skinless chicken breasts (or thighs for more flavor)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth (or white wine)
  • 1/4 cup fresh lemon juice (about 1-2 lemons)
  • 1 tablespoon lemon zest
  • Fresh parsley, chopped for garnish

Instructions

  1. Begin by seasoning the chicken breasts generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts, searing them for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and add the butter. Let it melt, then toss in the minced garlic and sauté for about 30 seconds until fragrant.
  4. Next, pour in the chicken broth (or white wine) and lemon juice, scraping up any browned bits leftover from the chicken. Allow the mixture to simmer for about 3 minutes.
  5. Stir in the lemon zest, and return the chicken to the pan, coating it with the sauce. Cook for an additional 2-3 minutes to warm through.
  6. Serve hot, garnished with fresh parsley.

Notes

Make sure to rest the chicken for a few minutes after cooking to keep it juicy. Adjust lemon juice to taste for tanginess.
