This blackened shrimp stroganoff combines smoky flavors with a creamy sauce, making it a comforting dish perfect for busy evenings.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 8 oz egg noodles
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Season the shrimp with Cajun seasoning. In a skillet, heat olive oil over medium-high heat. Add the shrimp and cook until blackened and cooked through, about 3-4 minutes per side. Remove from the skillet and set aside.
  2. In the same skillet, add the chopped onion and minced garlic. Sauté until fragrant, about 2 minutes. Add the sliced mushrooms and cook until tender, around 4 minutes.
  3. Pour in the chicken broth and bring to a gentle simmer. Stir in the heavy cream and let it thicken slightly, about 3-5 minutes.
  4. Meanwhile, cook the egg noodles according to package instructions. Drain and set aside, reserving a little pasta water if needed.
  5. Add the cooked shrimp to the creamy sauce, mixing well. Season with salt and pepper to taste.
  6. Serve the mixture over the egg noodles and garnish with fresh parsley.

Notes

This dish is best served warm and can be paired with a simple side salad or some crusty bread. Leftovers can be stored in the fridge for 2-3 days. Add a splash of chicken broth when reheating to restore creaminess.
