Nutritious and delicious pastries packed with protein and berries, perfect for breakfast or a snack.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup protein powder
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1/2 cup mixed berries (blueberries, raspberries, strawberries)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the whole wheat flour, almond flour, protein powder, baking powder, and salt in a mixing bowl.
  3. Mix the Greek yogurt, honey (or maple syrup), and vanilla extract in another bowl until smooth.
  4. Add the wet ingredients to the dry ingredients, mixing well to combine.
  5. Fold in the mixed berries gently so they don’t break apart.
  6. Spoon the batter into a greased muffin tin or pastry molds.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean from the center.
  8. Allow to cool before serving.

Notes

For extra moisture, try adding a tablespoon of applesauce to the batter. Be careful not to overmix.
