Warm and crispy banana fritters that bring comfort with every bite, perfect for brunch or dessert.

Ingredients

  • 3 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • Oil for frying (vegetable or canola oil)
  • Powdered sugar for dusting (optional)

Instructions

  1. Combine the mashed ripe bananas, all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt in a large mixing bowl.
  2. Stir in the milk and vanilla extract until you have a smooth, thick batter.
  3. Pour enough vegetable or canola oil into a large skillet to cover the bottom by about 1/4 inch. Heat the oil over medium heat until it’s hot but not smoking (around 350°F).
  4. Drop spoonfuls of the batter into the hot oil. Flatten them slightly with the back of the spoon.
  5. Fry the fritters in batches, ensuring you don’t overcrowd the skillet. Cook each side for about 2-3 minutes until golden brown and crispy.
  6. Carefully flip the fritters and cook the other side similarly.
  7. Remove the cooked fritters from the skillet and place them on paper towels to drain excess oil.
  8. Dust the fritters with powdered sugar if desired and serve warm for the best taste and texture.

Notes

Use very ripe bananas for maximum sweetness and flavor, and avoid overcrowding the pan to achieve crispy fritters.
