Apple Yogurt Pancakes

Delightful pancakes with the sweetness of apples and the creaminess of yogurt, perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt
  • 1/2 cup milk
  • 1 large egg
  • 2 medium apples (preferably sweet)
  • 1 teaspoon baking powder
  • 1 tablespoon sugar (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Peel and dice the apples into small cubes, then set them aside.
  2. Whisk together the yogurt, milk, and egg until well combined.
  3. Mix the flour, baking powder, sugar, cinnamon, and salt in another bowl.
  4. Fold the wet ingredients into the dry ingredients, mixing just until combined.
  5. Add the diced apples to the batter, stirring gently.
  6. Preheat a skillet over medium heat, adding butter or oil to prevent sticking.
  7. Pour about 1/4 cup of batter onto the skillet; cook for 2-3 minutes, then flip and cook for another 2 minutes.
  8. Repeat until all the batter is used.

Notes

Great served with maple syrup and whipped cream. Can be stored in the refrigerator for up to 3 days or frozen for up to a month.
